Rooster’s BBQ Sauce

What's better than a good BBQ?



5L Water
100g Lemon juice (about 4)
16Kg Sugar
10G Apple cider vinegar
175g Garlic powder
75g Curry powder
50g Bay leaves
100g Cumin seeds
100g Fennel seeds
2cans Whole grain mustard
20Kg Ketchup
55oz Orange juice (about 6)
500g Lime juice (about 3)
5C Cholula


Add water, sugar, and lemon juice to rondeaux and caramelize over high heat being careful not to burn sugar. In a separate pot, add vinegar and bring to a rapid boil. Once sugar is caramelized, SLOWLY add hot vinegar to rondeaux and let mixture boil together. Take fennel, cumin, and bay leaves and toast together then place in spice grinder and grind to a fine powder. Combine with remaining ingredients and add everything to vinegar mixture. Boil for 10 minutes and carefully transfer to 22Q container. Label & Date.
