Whether a spicy and dark fruit forward Syrah or a delicate and fresh Pinot Noir, there are consistencies that guests can expect in each delicious glass. By way of personal preference, Chef Noble and Eric Solomon gravitate toward red wines specifically from France and occasionally Spain. And with the menu at Rooster’s being rooted in classic French cuisine with a southern twist, such a selection makes perfect sense for food pairings.
Beginning in early September, our Bin 19 changed from the Priorat Mas Doix “Salanques” to Chateauneuf-du-Pape Domaine Giraud “Premices” ‘15 – a red wine that is rich and layered, is red fruit forward, amply acidic and pairs well with classic meat dishes. We couldn’t be more excited to share it with you!
